I’m Carmen and I am the owner of Carmen’s Praline Delights. I specialize in gourmet pralines and other delectable treats inspired by praline candy. I am a direct descendent of a native New Orleanian, and my passion for handmade candy stems from my mother’s stories about her childhood and my grandmother’s recipes.
A “praline” is a confection made with nuts and caramelized sugar. Popular in the South, this gourmet candy is often given as a gift to celebrate the holidays and other special occasions.
My pralines are handmade in small batches to ensure the highest quality. Only the finest ingredients are used, including organic sweet cream butter, pure cane sugar, and pecans from the southern San Joaquin Valley. The pecans share the same rich soil that lies at the base of giant redwood trees, and it is this fertile soil that creates a golden color and freshness not found in other pecans. Finishing spices include pure vanilla extract made with beans cultivated in Madagascar, and hand-harvested sea salt from France. These ingredients, along with old-fashion time-honored methods for making candy produce a delicious and distinctive sweet treat, reminiscent of home.
